Satisfy Your Carb Craving With A No-Carb Noodle “Miracle”

Craving comfort food but trying to watch your carb intake? I get it.

While there are there are plenty of low-carb “carb food” options out there, most of them taste…well, kind of like sand.

Thankfully, several years ago I discovered Miracle Noodles. Originally called “Shirataki” noodles, Miracle Noodles, which have a chewy, rice-noodle type of texture, are traditionally a staple known and used in Asia for over two thousand years. They are made from a soluble plant fiber called glucomannan, which in Miracle Noodles is derived from a carboydrate-free flour made from konnyaku imo root.

So how do you cook them?

The answer is…you don’t. To the extreme benefit of any “busy” healthy eaters out there, it’s this simple:

Miracle Noodles are instantly ready. You just drain the pack and rinse in a strainer or colander for a couple of minutes. Then you add any number of spices, herbs, vegetables, seeds, nuts or lean meats to complete the meal. As an added bonus, this glucomannan fiber significantly slows the absorption of sugar into your bloodstream means that any carbohydrates that you may consume with the Miracle Noodles would actually cause less damage.

Along with noodles that you can spice up yourself, Miracle Noodles now has “done for you” keto meals that I’ve really been enjoying. For example, their Thai Peanut keto meal incorporates their angel hair pasta noodle (my fav) along with a low calorie Thai peanut sauce packet you stir into the noodles and voila!. The whole meal tastes like Pad Thai but is mostly just water (97% water) and 3% plant fiber. It’s naturally low in calories (70 per serving) and has just 3g net carbs per serving. You can add your own chopped onions, peanuts, etc. to it if you want to dress it up a bit, though you don’t really even need to.

Safe to say that Miracle Noodles has made eating low-carb a heck of a lot more enjoyable. Whenever I have a craving for spaghetti, rice, or any other normally carb-rich meal, I instead go straight to my pantry where I am stocked up on Miracle Noodles.
